Gluten-Free Product Testing: Pamela’s Cornbread & Muffin Mix

Taste rating
We thought this cornbread tasted great.  Not too sweet, not too salty, but just right.  If you prefer the sugar can be reduced or deleted for less sweet cornbread or you can substitute the sugar with honey or agave liquid if so desired.

Texture rating
The texture was perfect.  Nice and moist and not crumbly.  We were impressed.

Storage rating
This is a dry mix and should store for quite some time in your pantry.

Pamela’s Cornbread Ingredients:  Organic Degermed Corn Meal; Brown Rice Flour; White Rice Flour; Tapioca Starch; Sweet Rice Flour; Potato Starch; Organic Degermed Corn Flour; Grainless & Aluminum Free Baking Powder (Sodium Bicarbonate, Sodium Acid Pyrophosphate, Potato Starch); Sea Salt; Xanthan Gum.

Just in time for fall soups, chowders and chili’s we were delighted to test Pamela’s new Cornbread & Muffin Mix.  This cornbread mix reminded me a lot of the little boxed cornmeal mix we all probably grew up with (before embracing the gluten-free diet).  Preparation is simple:  combine the mix, eggs, water, sugar and butter in a bowl; mix and pour into a prepared greased baking dish.  Bake for 25 minutes or so and out comes perfect cornbread!  Pamela’s also provides several helpful variations should you want to modify the taste a bit.
