Simple & Delicious Stroganoff

Chicken Stroganoff

If you are like most families you probably have a handful of tried and true recipes that you cook over and over again.  Sound familiar?  If so, don’t feel bad….we are all creatures of habit and particularly when we are leading the busy lifestyles that most of us do, it’s much easier to whip up tacos,  gluten-free spaghetti or some other easy family favorite than it is to experiment with a new recipe.  

This month I’d like to share one of my favorite quick & easy meals that everyone in my family always enjoys – stroganoff.  The great thing about stroganoff is that not only is it delicious but it is quick to prepare, doesn’t require a lot of ingredients and can be prepared with beef or chicken (whichever you happen to have on hand).

Basic Recipe for Stroganoff

  • 1-1/2 pounds thinly sliced meat (could be chicken or beef)
  • 2 cups mushrooms
  • 1 cup sliced onion
  • 2 cups gf beef stock
  • Olive oil
  • 1/8 cup red wine
  • 1 cup sour cream
  • 1 Tablespoon gf flour
  • Salt and freshly ground black pepper

Sauté the onions in a little olive oil, when tender, transfer the onions to a plate and set aside.  Add a little more olive oil to the pan and when hot, add the meat; sauté the meat until browned on all sides.  Return the onions back to the pan and stir in the beef stock.  Whisk the sour cream and flour in a small bowl.  Add a small amount of the liquid from the pan to the sour cream mixture and stir until smooth.  Move the meat and onions to the side of the skillet and add the sour cream mixture, stirring constantly until thoroughly incorporated.  Cook over medium heat until the sauce has a nice, medium –thick consistency.  Stir in the wine.  Add the mushrooms and simmer for about 5-10 minutes.  Adjust seasonings to taste with salt and freshly ground black pepper.  Serve over gluten-free pasta or rice.

Note:  if you happen to be dairy free – you can substitute the sour cream with Toffuti with equally delicious results.

It’s easy and delicious….this, too, may become one of your ol’ standby’s as it is in my house.
