In our humble opinion, oatmeal is the original comfort food. Regardless of season, there are just those days where you want to sit down over a warm bowl of hearty oats, breathe in the smell of cinnamon, and enjoy your favorite sliced fruit mixed with the sweet taste of honey and vanilla.

Oatmeal Cranberry & Banana Pancakes

We all love pancakes, and these fluffy favorites aren’t just tasty – they get a low-fat, nutritional boost from flax-enriched oats and protein-packed yogurt.
1 cup of Glutenfreeda Instant Oatmeal – natural flavor
1 cup gluten-free flour
1/2 cup brown sugar
2 tsp baking powder
1 tsp cinnamon
1/2 tsp salt
1 cup plain yogurt
1 cup milk
2 eggs
1 tsp vanilla
1 ripe banana, mashed
1/3 cup dried cranberries
1/4 cup melted butter

Combine dry ingredients in a bowl and mix. In a separate bowl, whisk together wet ingredients (yogurt, milk, eggs, vanilla and banana). Add to dry mixture and combine before stirring in melted butter and dried cranberries. Add ¼-½ cup dollops to greased skillet over medium heat and cook until bubbles form; flip and continue to cook until evenly browned. Serve immediately and enjoy with topping of your choice!

Cranberry-Apple Oatmeal Crisp

This fruity delight is a fix for any sweet tooth that’s much better for you than, well, most any other dessert. Served with some low-fat frozen yogurt, it’s as classically delicious as apple pie but without the gluten, of course.

Filling:
1 12oz. bag fresh cranberries
3 Granny Smith apples, diced
1 1/4 cup sugar
3 Tbsp gluten-free flour
1 navel orange, juiced & zested

Topping:
1 1/2 cups Glutenfreeda oatmeal, flavor of choice
1/2 cup gluten-free flour
3/4 cup brown sugar
1/2 cup butter, melted

Preheat oven to 350-degrees. Add filling ingredients to a greased baking dish. In a bowl, combine topping ingredients, stir well, and spread over top of filling. Bake uncovered for 1 hour, cool, and serve!

Baked Apple Oatmeal
This dish takes your regular breakfast bowl of oats to the next level. Great for brunches or just as a treat for yourself, it combines all the comforting aromas of cinnamon, nutmeg, brown sugar and baking apples into one glorious, gooey concoction.

1 1/2 cups Glutenfreeda oatmeal, natural or apple-cinnamon flavor
3/4 tsp baking powder
1/2 tsp cinnamon
Dash of freshly grated nutmeg
1/4 tsp salt
1 cup milk
1 egg, beaten
1/4 cup brown sugar (packed)
2 Tbsp melted, unsalted butter
1 apple, diced

Preheat oven to 400-degrees. In a large bowl, combine oats, baking powder, and spices. In a separate bowl, whisk together milk, egg, brown sugar, and butter. Add liquid ingredients to dry mixture and stir. Pour into a buttered baking dish and bake for 20 minutes. Remove from oven, top with diced apple and return to oven for 20 more minutes or until apple is tender and top is lightly browned. Serve warm and enjoy!
